Ingredients
8-10 button mushrooms
1 tbsp chives/ spring greens
1/4 cup cheese grated ( mozzarella/ processed)
Salt as required
Pepper as you wish
1 tbsp butter
1 tbsp oil
2 tbsp milk
Garlic spinach
1 tbsp oil
1 tbsp garlic chopped
1 cup fresh spinach
Salt as required
Pepper as you wish
Grilled tomatoes on vine

Method
- Break eggs into a bowl.
- Add milk, salt, black pepper and fresh chopped parsley and whisk all the ingredients together.
- Put the pan on moderate flame.
- In the pan add oil and butter, once the butter starts melting add the button mushroom.
- Add salt, freshly crushed black pepper. Reserve few for later use and the rest keep sauteing on high flame.
- Add the whisked egg mixture to the pan, reduce the flame and give it a nice stir.
- Reduce the flame and scrape the sides.
- Add grated cheese over the omelette.
- Fold the egg, lift everything and give it a lift.
- Press the edges of the omelette.
- Once the omelette is cooked transfer it to a plate.

Sauteed spinach and seared tomatoes
- In a pan add oil, garlic and shredded spinach, salt and crushed black pepper and mix well and let the spinach cook.
- In other pan add oil and cherry tomatoes, salt and keep it on a high flame.
- Mushroom And Cheese Omelette along with sauteed spinach and seared tomatoes is ready to be served!
